The FatBack Philosophy

At Fatback we believe our traditional methods coupled with our modern capabilities are an essential link in the complicated and tenuous food supply chain for our country. We also believe those traditional methods make for the best tasting pork you’ve ever had.

We’re just a small group of folks in Eva, Alabama who love good hog, but our long-established techniques and state-of-the-art, humane processing facility allow us to feed our neighbors far and wide. From the smoke pits of barbecue joints all around the South to the finer dining establishments up North, our carefully crafted, hands-on approach to flavor has left an unmistakable mark on a variety of dining experiences.

For generations, pork was a staple of the American diet. But through the industrialization of the food supply, new, less-humane practices emerged, and pork production was taken off the small farms and moved into large commercial houses where animals were packed onto a slab of concrete, pumped with antibiotics and hormones, fed unhealthy diets, and slaughtered in a factory. That assembly line technique is certainly efficient and good for big business, but the quality of the pork is severely diminished and the consumer receives an inferior product.

Traditional Methods. Modern Capabilities.

In 2013 FatBack set out on a mission to take the curing and smoking methods back to a more traditional approach. Sure, it takes a little more work on our end to salt cure hogs or link sausage by hand, but these time-tested processes—when implemented rigorously and with care—dramatically improve the overall quality of the meat. 

After a number of evolutions and refinements to our overall business here at Fatback, one thing has remained true: Respect the Pig. And today, we’re proud to provide a steady, expertly-crafted supply of premium pork products to chefs, retailers, and homes across much of the country.
